tomato or chilli that does not come out of a bottle? Well, I have four tantalising dips that will leave your taste buds
tingling and wanting more. The dips can be used as dressing for seafood salads as well. Give them a try; you’ll find
yourself wanting to say: “Dip-dip hooray!
Japanese-Style Peanut Dipping Sauce
This beautiful sauce, which has a chunky texture, is best served with fresh raw slices of salmon, some shredded
carrot and shredded Japanese seaweed, making a dish thats ideal as an appetiser.
Ingredients:
1 tbsp chunky peanut butter
4 tbsp lime juice
1 tbsp light soy sauce
1 tsp miso
2 tbsp sugar or to taste
1 tsp finely chopped young ginger
1 tsp finely chopped garlic
1 tbsp finely chopped spring onions
1 tsp chopped cili padi
Method:
Put all ingredients into a small mixing bowl. Mix well until the sugar dissolves, the peanut butter is smooth and
everything is well-blended. Pour into individual bowls for serving.
Chilli Sauce Dip
This is the perfect dipping sauce for any deep-fried meat dishes.
Ingredients:
100ml vinegar
6 fresh red chillies, seeded and finely blended
2 tbsp plum sauce
3 tbsp sugar
1/4 tsp salt or to taste
4 tbsp toasted peanuts or cashew nuts, finely pounded
2 tbsp toasted sesame seeds
Method:
Put vinegar in a saucepan. Bring to a simmering low boil on gentle heat. When it begins to boil, add chillies, plum
sauce, sugar and salt. Stir well and allow to simmer until the sauce turns slightly thicker.
Remove from the heat. Stir in peanuts or cashew nuts and sesame seeds. Serve when cooled.
Tangy Citrus Dipping Sauce
Tangy, sweet and slightly spicy, this sauce is great in which to dip deep-fried tofu pieces garnished with cucumber
shreds. Sprinkle the sauce with toasted sesame seeds for added crunch.
Ingredients:
Juice of one orange
2 tbsp lemon juice
150ml water
1 tbsp Lee Kum Kee Premium oyster sauce
3 tbsp Thai chilli sauce
1/2 tsp orange rind
1/2 tsp lemon rind
1/2 tsp salt
1 1/2 tsp sugar or to taste
Thickening
1 1/2 tsp cornflour
1 tbsp water
Method:
Combine all the ingredients except the thickening ingredients in a saucepan. Cook over slow and gentle heat for 15
to 20 minutes.
Add thickening ingredients, stirring well to blend. Leave aside to cool before serving.
Thai Chilli Dip
This tangy sauce is ideal for deep-fried spicy rolls or any seafood dishes. Steam fresh crabs or prawns and use this
dipping sauce as an accompaniment.
Ingredients:
4 tbsp Thai sweet chilli sauce
1 tbsp lime juice
1/2 tsp fish sauce (nampla)
2 pieces peanut candy (kong thn’g), crushed
1 tsp toasted sesame seeds
Method:
Combine all ingredients together in a small bowl. Mix well to blend. Set aside for the flavours to merge.
