100g icing sugar, sifted
1 egg yolk
1 tsp vanilla essence
1/2 tsp baking powder
Beat butter and sugar until light and fluffy. Mix in egg yolk and essence. Stir in sifted dry ingredients to form soft dough.
Put dough into a cookie press and press shapes out onto greased baking sheets. Bake in preheated oven at 180 ºC for 12 to 15 minutes or until light and golden brown.
Allow to cool on the tray for two minutes before lifting it carefully onto wire racks to cool completely.
